MENU 1

Grilled langoustine

- zucchini purée with dill, yellow zucchini crudité, chili oil, langoustine foam, roasted almonds

Deer

- Luleå chanterelles, chanterelle foam, parsley root purée, beets, apple

Chocolate & raspberry

- chocolate terrine, raspberry sorbet, chocolate crumble

MENU 2

Chanterelle toast

- Luleå chanterelles, Guânciale, pickled kohlrabi, brioche, chervil

Pike-perch

- sauce vin blanc, chives oil, cabbage terrin, fried black cabbage, confited onion, almond potato purée

Apple

- apple mosaic, crumble, caramel sauce, bourbon vanilla ice cream, apple crisp

MENU 3 (vegetarian)

Chanterelle toast (alt. vegetarian)

- Luleå chanterelles, pickled kohlrabi, brioche, chervil

Cloudberry glazed butternut squash

- goat cheese crème, browned butter, roasted hazelnuts, butternut squash purée, pickled butternut squash, fried kale
